Chef Tito Ayon

Tito Ayon is the Sous Chef at Trilogy at the Polo Club in Indio. Drawing on the skills he’s developed throughout his time in the kitchen, he enjoys taking familiar dishes and creating something unique through flavor, technique, and presentation. He continues to build on that experience while pursuing higher education in the culinary field.

What Tito is most passionate about is sharing what he’s learned. Whether working alongside his team or leading a cooking demonstration, he hopes to help people discover their own passion for cooking while understanding why we cook the way we do, how different techniques work, why we use them, and how it all comes together.
